Curried Chicken with Peanut Sauce & Salad

*Yields toppings for one 12-14 inch diameter pizza

To pick-up where we left off with our last recipe for pizza dough, let us think in terms of a thin flatbread with flavors of East meets West instead of a traditional classic pizza that one might think.

 
Curry Glaze
Amount Ingredient Method

Salt

Combine all ingredients mixing together well. Reserve.
Peanut Sauce
Amount Ingredient Method

4 tablespoons

Smooth Peanut Butter

Fresh Minced Ginger

Chili Paste

Soy Sauce

Water

Combine all ingredients mixing together well. Reserve.
Chunky Tomato Basil Sauce

Garlic Cloves

Fresh Basil Leaves

Ripe Tomatoes, Cored and Quartered

Tomato Paste

Kosher Salt

Ground Black Pepper

  1. Place the garlic and basil leaves in a food processor and pulse until finely chopped. Add the tomatoes and pulse briefly. Do not puree the tomatoes, as the sauce is meant to be chunky.
  2. Transfer to a medium bowl. Stir in the tomato paste, salt, pepper, and sugar until mixed well. If the sauce looks watery, add more tomato paste. Refrigerate for an hour or so to allow flavors to marry together.

Coarsely Chopped Parsley

Coarsely Chopped Cilantro

  1. Combine all ingredients and mix together well.
  2. Reserve.
  1. Brush sesame oil lightly over one 6 ounce chicken breast and grill until cooked thoroughly, dice into bite size pieces and reserve.
  2. From last month’s pizza dough recipe article—after refrigerating, cut in half and using ½ off the dough roll out and stretch to approximately 12 inches in diameter, using flour or cornmeal to dust to prevent from sticking. Brush off excess flour and brush both sides with olive oil. Place on a preheated grill and cook on one side for approximately 2 minutes or until grill marks appear and the dough begins to cook, then flip over and repeat this process.
  3. Lightly dust top side of pizza crust with 1 tablespoon of grated Parmesan cheese and sprinkle 1 cup of Mozzarella Cheese on top. Next drop spoonfuls of the chunky tomato basil sauce onto the pizza. Distribute the cooked, diced chicken evenly over the pizza then sprinkle and drizzle the curry glaze over all.
  4. Pop the pizza into a 400 degrees F pre-heated oven for approximately 5 minutes or until cheese is completely melted.
  5. Just before serving, top the pizza with the salad ingredients. Drizzle the Thai peanut sauce over the salad.
  6. Cut into desired pieces, serve and enjoy.

Final note: This pizza is inspired by chicken satay, with the flavors of curried chicken and peanut sauce. The refreshing salad on top adds crunch and juiciness.
