South Dining Hall decorated for Mardi Gras.
On the evening of Tuesday, March 4th, both dining halls celebrated Mardi Gras with special menus featuring Cajun cooking and special desserts. South Dining Hall had over 3,300 students come in to enjoy Cajun chicken, blackened catfish, jambalaya, Louisiana red beans and rice, fried okra, collard greens, cornbread, and rum raisin bread pudding. The make-your-own dessert bar was a hit as students consumed over 1100 pounds of fresh strawberries to compliment their pound cake, brownies, hot fudge and caramel sauce. At North Dining Hall, students enjoyed TV bars, cream puffs eclairs, king cakes and other decadent desserts.
